INGREDIENTS
1/2 cup skim milk ricotta
1/2 cup pumpkin puree or any winter squash
(see next page for instructions)
1/2 cup freshly grated parmigiano reggiano
1 large egg yolk
1 teaspoon lemon zest
1 teaspoon sea salt
1 cup all purpose flour, plus more for dusting
8 tablespoons butter, divided
6 tablespoon olive oil, divided
1/2 tsp black truffle oil
10-15 leaves fresh sage, plus more for garnish
shaved parmigiano reggiano for serving
(use vegetable peeler)
